That led me to this Hearty Reuben Bake—a delicious twist on the traditional Reuben, baked into a gooey, cheesy casserole.

Ingredients

  • 1 loaf refrigerated crescent roll dough (8 oz)

  • 1 pound sliced corned beef

  • 1 cup sauerkraut, drained

  • 1 cup Thousand Island dressing

  • 2 cups shredded Swiss cheese

  • 1/4 cup butter, melted

  • 1/2 teaspoon caraway seeds (optional, for garnish)

  • Fresh parsley for garnish (optional)

Directions

  • Preheat Oven: Set your oven to 375°F (190°C). Grease a 9×13-inch baking dish with non-stick spray or butter.
  • Layer the Base: Roll out half of the crescent roll dough and press it into the bottom of the prepared baking dish. Pinch the seams together to form a solid layer.
  • Add Corned Beef: Spread the sliced corned beef evenly over the dough layer.
  • Add Sauerkraut: Sprinkle the drained sauerkraut on top of the corned beef.
  • Spread Dressing: Drizzle the Thousand Island dressing evenly over the sauerkraut.
  • Add Cheese: Sprinkle 1 1/2 cups of the shredded Swiss cheese on top of the dressing.
  • Top Layer: Roll out the remaining crescent roll dough and carefully place it on top of the casserole, sealing any seams.
  • Butter and Garnish: Brush the top layer with melted butter and sprinkle with caraway seeds if desired.
  • Bake: Place the casserole in the oven and bake for 30-40 minutes, or until the top is golden brown and the cheese is melted and bubbly.
  • Final Cheese Topping: Remove the bake from the oven, sprinkle the remaining 1/2 cup of Swiss cheese on top, and bake for an additional 5 minutes until melted.
