Growing up, sloppy joes were a weeknight staple in my house, but I always wanted something a little more elevated.
That’s why I created this smoky sloppy joe and provolone recipe—a rich, savory twist on a classic comfort food that’s easy to make and packed with flavor.
The melted provolone and a sprinkle of shredded cheddar add the perfect gooey finish, making this dish an instant family favorite.

kcalIngredients
1 pound ground beef (80/20 blend for flavor)
1 small onion, finely diced
1 small red bell pepper, finely diced
2 cloves garlic, minced
1 cup tomato sauce
1/4 cup ketchup
2 tablespoons tomato paste
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 tablespoon brown sugar
1 teaspoon smoked paprika
1/2 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper
4 burger buns (toasted)
4 slices provolone cheese
1/4 cup shredded cheddar cheese (optional for topping)
Directions
- Heat a large skillet over medium-high heat.
- Add the ground beef and cook until browned, breaking it up with a spoon as it cooks (about 5–7 minutes). Drain excess fat if needed.
- Add Vegetables and Seasoning:
- Stir in the diced onion and red bell pepper. Cook for 3–4 minutes until softened.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Create the Sauce:
- Stir in the tomato sauce, ketchup, and tomato paste.
- Add Worcestershire sauce, apple cider vinegar, and brown sugar. Mix well.
- Sprinkle in smoked paprika, chili powder, cumin, salt, and black pepper.
- Stir to combine and bring to a simmer. Reduce heat and let it simmer for 10–12 minutes, stirring occasionally, until the sauce thickens.
- Prepare the Buns and Cheese:
- Preheat your oven to broil.
- Place the bottom halves of the toasted buns on a baking sheet.
- Spoon the sloppy joe mixture generously onto each bun.
- Top each with a slice of provolone cheese and sprinkle a little shredded cheddar if desired.
- Melt the Cheese:
- Broil the sandwiches in the oven for 1–2 minutes or until the cheese is melted and bubbly. Keep an eye on them to prevent burning.
- Serve:
- Place the top halves of the buns on the sandwiches and serve immediately. Enjoy with a side of fries, coleslaw, or a green salad.
Notes
- For extra smokiness, add 1/2 teaspoon of liquid smoke to the sauce.
- This recipe can be made ahead and reheated—just add a splash of water if the mixture thickens too much in the fridge.
- Substitute ground turkey or chicken for a lighter option.
- Use gluten-free buns if needed.
- Add jalapenos or hot sauce for a spicy kick.
