  • 1 pound ground beef (80/20 blend for flavor)

  • 1 small onion, finely diced

  • 1 small red bell pepper, finely diced

  • 2 cloves garlic, minced

  • 1 cup tomato sauce

  • 1/4 cup ketchup

  • 2 tablespoons tomato paste

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon apple cider vinegar

  • 1 tablespoon brown sugar

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon salt (adjust to taste)

  • 1/4 teaspoon black pepper

  • 4 burger buns (toasted)

  • 4 slices provolone cheese

  • 1/4 cup shredded cheddar cheese (optional for topping)

Directions

  • Heat a large skillet over medium-high heat.
  • Add the ground beef and cook until browned, breaking it up with a spoon as it cooks (about 5–7 minutes). Drain excess fat if needed.
  • Add Vegetables and Seasoning:
  • Stir in the diced onion and red bell pepper. Cook for 3–4 minutes until softened.
  • Add the minced garlic and cook for another 30 seconds until fragrant.
  • Create the Sauce:
  • Stir in the tomato sauce, ketchup, and tomato paste.
  • Add Worcestershire sauce, apple cider vinegar, and brown sugar. Mix well.
  • Sprinkle in smoked paprika, chili powder, cumin, salt, and black pepper.
  • Stir to combine and bring to a simmer. Reduce heat and let it simmer for 10–12 minutes, stirring occasionally, until the sauce thickens.
  • Prepare the Buns and Cheese:
  • Preheat your oven to broil.
  • Place the bottom halves of the toasted buns on a baking sheet.
  • Spoon the sloppy joe mixture generously onto each bun.
  • Top each with a slice of provolone cheese and sprinkle a little shredded cheddar if desired.
  • Melt the Cheese:
  • Broil the sandwiches in the oven for 1–2 minutes or until the cheese is melted and bubbly. Keep an eye on them to prevent burning.
  • Serve:
  • Place the top halves of the buns on the sandwiches and serve immediately. Enjoy with a side of fries, coleslaw, or a green salad.
